Homemade Heart-Shaped "Oreo" Cookies
What could be better than treating your sweetheart (or yourself) to homemade ‘Oreo’ cookies? Making homemade Oreos also means that you can eat all the vanilla cream filling that you want (without the cookie)!
These are my favorite treat to make for Valentine’s Day, but can obviously be enjoyed at any time of year. The heart shape makes them an especially sweet gift for a friend/family member/lover (or just treat yo' self).
There’s the addition of coconut oil in the cream filling, which gives the cookies a really nice, light coconut flavor. But you can also use coconut oil without flavor if you don’t think that chocolate and coconut go well together!
Homemade Heart-Shaped Oreo Cookies
(Makes around 30 depending on cookie cutter size)
Chocolate Cookies
1 1/3 cups Dutch-process cocoa powder
1 1/2 cups all-purpose flour, plus more for dusting
1/4 teaspoon salt
225g salted butter, softened
2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
Sift together cocoa powder, flour and salt.
In a different bowl, cream together the butter and sugar. Add the eggs one at a time, then the vanilla, mixing well in between adding each ingredient. Mix the dry and wet ingredients together.
Divide the dough into 2 pieces. Place one piece between two baking sheets and roll until a 1/4 inch thick. Repeat with the other piece. Refrigerate both pieces for 30-60 minutes.
Using a heart-shaped cookie cutter, cut the dough into 60 or so hearts. Re-roll the scraps once or twice, and cut again. Place the cookies on baking paper lined pans or baking sheets. Chill in the fridge for 20 minutes. Meanwhile, preheat your oven to 160C.
Bake until they are set and slightly darker around the edges, this will take about 20 minutes. Cool completely.
Meanwhile, prepare your filling.
Vanilla Cream Filling (with slight coconut taste)
110g salted butter, softened
3 tbsp coconut oil (can be substituted with butter)
1 1/2 cup powdered sugar
1 tsp vanilla extract
Cream together your butter and coconut oil until smooth.
Add your powdered sugar and vanilla extract, mixing until smooth.
Use a piping bag or a spatula (or even just a knife), and spread around one tsp onto your cooled cookies. Press two cookies together to make ‘Oreo’ style valentines cookies.
