Crunchy Chocolate Chip Cookies with Rich Dark Chocolate

These aren't your average chocolate chip cookie, they'll have you addicted in no time. These deliciously rich chocolate chip cookies are made with dark chocolate. If you're a fan of a crunchy/crispy cookie, you'll love these. 

Crispy cookies are the aim in my world. I love a good snap when you break a cookie in half. I'm not sure why, but I've never enjoyed soft cookies as much as other people seem to do... Does this make me weird?

Chocolate Chip Cookies (makes around 18 crunchy cookies)

115g softened butter
70g sugar
70g powdered/icing sugar
1 egg
1/4 tsp vanilla essence (or 1-2 drops)
140g plain flour
1/4 tsp salt
1/4 tsp baking soda
100g dark chocolate

Pre-heat your oven to 180C. 

Mix your butter with your sugar and powdered sugar, until creamy. Crack your egg into this sugar-butter mixture and mix well until smooth. Add the vanilla essence.

In a separate bowl mix your flour, salt and baking soda. Add the dry ingredients to the wet ingredients a little at a time until incorporated.

Chop up your dark chocolate into “chocolate chips”. Add your chocolate into your batter and mix. 
Have your baking tray ready, either use baking paper or lightly butter your tray. 

Using a spoon, scoop half tablespoons of batter onto your prepared tray. Be sure to leave a lot of space between each scoops of batter, as the cookies will spread a lot. 

Bake until golden, for 10-12 minutes. Transfer to a rack to cool. Store in an airtight container.
